The grapes

The care given to our vineyards allows us to produce high quality grapes, suitable for producing fine and intense wines. We harvest the grapes by hand only and the vinification process takes place in a very short time. Exposure to the sun and temperature variations make the grapes rich in colour, sugars and aromas.

The soil enriches them with mineral notes and essential tannins are formed through the presence of limestone. Only after proper ageing does the wine reveal itself with a rich taste, with high concentrations and varietal tones.

Chardonnay

Chardonnay grapes are produced on a small vineyard facing south-west . The low yield of the vines gives the grape aromas of exotic fruit. The low fertility of the soil, made up of red clay, enhances concentration of both sugars and aromas.

Merlot

The Merlot grape is what we produce most on the farm since Merlot is the basis of the Bordeaux-style blends produced on the winery. During pruning, the buds are selected based on them being inserted and the amount of bunches produced. Little defoliation is favoured so that a greater amount of light can get in and so that there is sufficient ventilation to prevent fungal attacks, allowing high quality produce. The time to harvest is decided once physiological ripeness and complete lignification of the grape stems (turning woody and brown) are checked. What results then are rich grapes, with strong tannins, and high concentrations of sugars and mineral components.

Cabernet Franc

Cabernet Franc grapes are harvested from a vineyard which was planted in 1996. The soil mainly consists of red clay with a basis of limestone pebbles. The vines have large stems but, due to guyot pruning, only a few bunches per plant are produced. It is the last grape that is harvested and, in the more favourable years, the wine that we obtain from this grape will helps in forming our selection of Cabernet.

The grape has loose bunches, with a thin skin; the low production makes it a product rich in sugars with an intense purple colour.

Cabernet Sauvignon

Cabernet Sauvignon grapes are produced from a south-facing vineyard. Due to the limestone soil, the low level of farming, the large leaf area, the "spurred cordon" pruning and thinning the bunches before veraison, we are able to pick and gather grapes with unique characteristics, outstanding ripeness and that have significant sugar concentrations. Once we have completed the vinification process, there is a sense of gratitude towards these grapes due to the wine that the grapes produce.

Pinot Nero (Pinot Noir)

Pinot Nero grapes are produced in vineyards of different ages and with different cloning. It took a long time to decide on the area where they would be planted and what type of exposure was needed before bedding the vine shoots. The grapes produced in the younger vineyards are made into our rosé wine while the grapes that are harvested in the oldest vineyards give, after a careful selection, the grapes destined for our crù.

The care given to the Pinot Nero vineyards is like the love given to a child and the bunches that are selected to be made into wine take on a singular and unique importance.
