The Wine Cellar

We have renovated an old building near our vineyards which had been used for other functions in the past. We were therefore given the opportunity to install design features that are very insulating and have a low environmental impact.

The external wooden parts absorb the sun's rays avoiding heat radiation inside the cellar and by insulating with rock wool allows an optimal temperature to be continuously maintained throughout the year.

The thermal conditioned, steel barrels help fermentation maintaining temperatures which preserve all the aromatic fraction of the grapes that are put into fermentation. In the barrel cellar there are 500-litre French oak barrels, with different levels of toasting and ages.

For more delicate wines we only use second-hand barrels which have been lightly toasted. We pay great attention our wine-making and wine refinement processes so that we can enhance what nature has created in our vineyards. However, we are always looking for new ways to improve what has been learned and carried out in previous years and in wine-making there is always room for new experiences and practices so that better wines are obtained in the end.
