The cellar
Near our vineyards, we have renovated an ancient structure that once served a variety of purposes. This opportunity has allowed us to adopt highly insulating construction solutions with a low environmental impact.
The wooden facades capture the sun's rays, preventing heat from passing into the cellar, while the rock wool insulation ensures an ideal temperature all year round.
Our steel containers, all rigorously temperature-controlled, allow fermentation to take place at optimal temperatures, sublimely preserving the entire aromatic range of the grapes.
In our cellar, we store 500-liter French oak barrels, each with different toastings and ages, which enrich the profile of our wines.
For the most delicate labels, we select only those characterized by light roasting, to ensure that every sip expresses the purity and elegance of the fruit.
Every stage of winemaking and aging is handled with meticulous attention, as we aim to enhance the beauty and complexity that nature has bestowed on our vineyards.
