The uve

The care dedicated to the vineyards allows us to produce high quality grapes, suitable for producing fine and intense wines. We carry out the Grapes are harvested only by hand and the vinification takes place in a very short time. Exposure to the sun and temperature variations make the grapes rich in color, sugars, and aromas.

The soil enriches them with mineral notes, and the limestone promotes the formation of significant tannins. Only after proper aging does the wine reveal its rich flavor, high concentrations, and varietal aromas.

Uva Chardonnay

The Chardonnay grape is produced on a small vineyard with a southwest exposure. The low yields of the vines give the grapes aromas of exotic fruit. The poor fertility of the soil, composed of red clay, favors the concentration of both sugars and aromas.

Uva Merlot

Merlot is the main grape variety produced on the estate, being the basis of the Bordeaux blends produced in the winery. During pruning, the buds are selected for placement and their number is determined to produce clusters that, with minimal defoliation, can receive the greatest amount of light and have sufficient ventilation to prevent fungal attacks, allowing for high-quality production. Harvesting is decided after checking for phenolic ripeness and complete lignification of the grape seeds. The result is rich grapes with strong tannins, high sugar concentrations, and mineral components.

Uva Cabernet Franc

The Cabernet Franc grapes are harvested from a vineyard planted in 1996. The soil is primarily red clay with a subsoil of calcareous pebbles. The vines have large trunks, but the Guyot pruning system compromises yield, resulting in fewer bunches per plant. It is the last grape harvested, and in the best years, part of the wine produced from it will be used to make our Cabernet.

The grapes have sparse bunches with thin skins; the low yield makes them rich in sugars and have a deep purple color.

Uva Cabernet Sauvignon

Cabernet Sauvignon grapes are grown in a south-facing vineyard. The calcareous soil, low-stance training system, large canopy, spurred cordon pruning, and bunch thinning before veraison yield grapes with unique characteristics, achieving excellent ripeness and high sugar concentrations. After their vinification, one feels a sense of gratitude toward these grapes for the wine they produce.

Grape Pinot Noir

Pinot Noir grapes are grown in vineyards of various ages and with different clones. The soils on which they are planted and their exposure were carefully considered before planting the vines. The grapes grown in the younger vineyards are vinified for our rosé, while the grapes harvested in the older vineyards, after careful selection, yield the grapes destined for our cru.

The care given to the Pinot Noir vineyards has a filial character and the selection of the bunches that will be vinified takes on a singular and unique importance.
